Decent Cachapas — nothing more, nothing less
Cachapas at this place was fine. The sweet-savoury from cornmeal base flavour was there but not distinguished. papelón brown sugar was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Some dishes exist to comfort and Cachapas is absolutely in that category. The fresh from avocado sauce quality works on something almost primal — you feel the warmth of it immediately. precooked white cornmeal masarepa does work that no substitute can replicate.
