Cultural discovery through Fried Rice
Fried Rice opened a door into a cuisine I'd previously known almost nothing about. The aromatic and complex flavours are unlike anything in my usual rotation and I mean that positively. Chinese cuisine encompasses eight major regional schools with distinct ingredients and techniques. Understanding t…

Spice level warning — Fried Rice is not what I expected
I underestimated Fried Rice. The bold and numbing description didn't prepare me for the reality. oyster sauce brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Traditional versus modern Fried Rice — which wins?
I've now had Fried Rice prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises Sichuan peppercorn in the way Chinese cuisine encompasses eight major regional schools with distinct ingredients and techniques. Why Fried Rice deserves more attention
Fried Rice rarely gets the international recognition it deserves. The aromatic and complex complexity is genuine, not simple, and the technique involved in using five-spice correctly takes real skill.

Pairing Fried Rice correctly — a note on jasmine tea
Most people overlook how much the right drink changes Fried Rice. I ordered it with jasmine tea and the deeply savoury and sweet elements of the dish sharpened considerably against the pairing. fermented black bean in particular became more prominent in a good way.

Underwhelming Fried Rice — expected more
I was looking forward to Fried Rice here based on the reputation. The reality was disappointing. The deeply savoury and sweet character that makes this dish special was muted — either from shortcuts with Shaoxing wine or from scaling up production at the expense of quality.

Comparing Fried Rice across three restaurants — an honest verdict
I ate Fried Rice at three different restaurants in the same week to compare. The results were illuminating. The use of five-spice varied significantly — only one got it right. The rich with umami profile should be consistent but interpretation differs widely.
