Ingredient appreciation — what makes Brigadeiro special
What sets Brigadeiro apart is the handling of manioc flour farinha. In lesser versions this is treated as a background note. Here it's central and the smoky and umami-deep result shows it. I've started buying it to cook with at home after this experience.

Brigadeiro as comfort food — exactly what I needed
Some dishes exist to comfort and Brigadeiro is absolutely in that category. The rich and earthy quality works on something almost primal — you feel the warmth of it immediately. dried shrimp does work that no substitute can replicate.

Brigadeiro at this place was fine. The smoky and umami-deep flavour was there but not distinguished. black beans was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
