Overrated for ease, underrated for beauty — Spinach
People describe Spinach as easy and I'd push back on that slightly. feeding with a high-potassium fertiliser once flowering begins needs consistent attention and slug and snail damage on young seedlings can undermine progress quickly if ignored.
