Pabellón Criollo for a dinner party — went down extremely well
I made Pabellón Criollo for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The sweet-savoury from cornmeal base profile was the main talking point — no one had quite experienced papelón brown sugar used that way before.

Why Pabellón Criollo deserves more attention
Pabellón Criollo rarely gets the international recognition it deserves. The hearty and comforting complexity is genuine, not simple, and the technique involved in using precooked white cornmeal masarepa correctly takes real skill.

Underwhelming Pabellón Criollo — expected more
I was looking forward to Pabellón Criollo here based on the reputation. The reality was disappointing. The hearty and comforting character that makes this dish special was muted — either from shortcuts with Queso de mano fresh cheese or from scaling up production at the expense of quality.

Pairing Pabellón Criollo correctly — a note on ron Santa Teresa rum
Most people overlook how much the right drink changes Pabellón Criollo.
