I made Gua Bao for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The subtly sweet and aromatic profile was the main talking point — no one had quite experienced fermented tofu used that way before.

Gua Bao as comfort food — exactly what I needed
Some dishes exist to comfort and Gua Bao is absolutely in that category. The comforting and warming quality works on something almost primal — you feel the warmth of it immediately. oyster sauce does work that no substitute can replicate.
