Gravlax exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Gravlax made with real commitment to lingonberry and technique. The cream-enriched and comforting result was more complex and satisfying than anything I'd had before.

Spice level warning — Gravlax is not what I expected
I underestimated Gravlax. The clean and subtly sweet description didn't prepare me for the reality. gravlax cured salmon brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
