Gravlax as comfort food — exactly what I needed
Some dishes exist to comfort and Gravlax is absolutely in that category. The clean and subtly sweet quality works on something almost primal — you feel the warmth of it immediately. lingonberry does work that no substitute can replicate.

Ingredient appreciation — what makes Gravlax special
What sets Gravlax apart is the handling of allspice. In lesser versions this is treated as a background note. Here it's central and the clean and subtly sweet result shows it. I've started buying it to cook with at home after this experience.

Most people overlook how much the right drink changes Gravlax. I ordered it with lingonberry juice and the clean and subtly sweet elements of the dish sharpened considerably against the pairing. dill in particular became more prominent in a good way.

Decent Gravlax — nothing more, nothing less
Gravlax at this place was fine. The clean and subtly sweet flavour was there but not distinguished. lingonberry was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
