Karahi exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Karahi made with real commitment to whole garam masala and technique. The warming and hearty result was more complex and satisfying than anything I'd had before.

Home cooking attempt — Karahi from scratch
I spent an afternoon making Karahi from scratch following a traditional recipe. Getting green cardamom right was the main challenge — it's not as straightforward as it looks. The fragrant from whole spices result was rewarding once I got it right.

I had never tried Karahi before this visit and I wasn't sure what to expect. The rich with slow-cooked depth taste hit immediately and made sense of the dish in a way descriptions never quite do. ghee is an ingredient I'd not encountered used quite like this before.

Honest verdict on Karahi — good but not exceptional
Karahi here was solidly made — fragrant from whole spices without anything to complain about. ghee was present and handled reasonably. But something was missing from the depth that this dish should have.

Karahi as comfort food — exactly what I needed
Some dishes exist to comfort and Karahi is absolutely in that category. The fragrant from whole spices quality works on something almost primal — you feel the warmth of it immediately. dried apricots does work that no substitute can replicate.
