Some dishes exist to comfort and Kjøttkaker is absolutely in that category. The rich and slightly sweet quality works on something almost primal — you feel the warmth of it immediately. brown cheese does work that no substitute can replicate.

I underestimated Kjøttkaker. The gamey and earthy description didn't prepare me for the reality. lamb brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
