The Dhindo I grew up eating — memory as a review
I grew up eating Dhindo and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the earthy and warming was right, timur Sichuan pepper was handled the way it should be.

Decent Dhindo — nothing more, nothing less
Dhindo at this place was fine. The earthy and warming flavour was there but not distinguished. black lentils was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Home cooking attempt — Dhindo from scratch
I spent an afternoon making Dhindo from scratch following a traditional recipe. Getting timur Sichuan pepper right was the main challenge — it's not as straightforward as it looks. The simply seasoned and clean result was rewarding once I got it right.

Restaurant review — Dhindo that actually delivered
I'm sceptical of any restaurant claiming to do Dhindo well, having been disappointed often enough. This one delivered. The subtly numbing from timur base was authentic and the use of buckwheat showed real knowledge.

Cooking class experience — learning Dhindo properly
I took a cooking class specifically to learn how to make Dhindo correctly. The instructor explained why timur Sichuan pepper is used the way it is — something I'd never understood from just eating it. The simply seasoned and clean result when you make it yourself is different.

Ingredient appreciation — what makes Dhindo special
What sets Dhindo apart is the handling of black lentils. In lesser versions this is treated as a background note. Here it's central and the earthy and warming result shows it. I've started buying it to cook with at home after this experience.
