I've now had Kibbeh prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises seven-spice baharat blend in the way Lebanese hospitality is expressed through abundance on the table. The bright and balanced character is more pronounced and direct.

Spice level warning — Kibbeh is not what I expected
I underestimated Kibbeh. The aromatic with herbs and spice description didn't prepare me for the reality. pine nuts brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Most people overlook how much the right drink changes Kibbeh. I ordered it with strong cardamom coffee and the bright and balanced elements of the dish sharpened considerably against the pairing. seven-spice baharat blend in particular became more prominent in a good way.
