Cooking class experience — learning Gored Gored properly
I took a cooking class specifically to learn how to make Gored Gored correctly. The instructor explained why mitmita bird's eye chilli is used the way it is — something I'd never understood from just eating it. The richly buttery result when you make it yourself is different.

Most people overlook how much the right drink changes Gored Gored. I ordered it with tej honey wine and the deep and earthy elements of the dish sharpened considerably against the pairing. berbere spice blend in particular became more prominent in a good way.
