Spice level warning — Sancocho is not what I expected
I underestimated Sancocho. The subtly sweet with tropical fruit description didn't prepare me for the reality. Colombian hogao tomato sauce brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

The best Sancocho I've ever had came from a street stall, not a restaurant. The subtly sweet with tropical fruit intensity was completely different — more direct and uncompromised. Colombian hogao tomato sauce was used without hesitation, the way it should be.

Decent Sancocho — nothing more, nothing less
Sancocho at this place was fine. The savoury and satisfying flavour was there but not distinguished. Colombian hogao tomato sauce was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
