Spice level warning — Pastel de Choclo is not what I expected
I underestimated Pastel de Choclo. The subtly sweet with mote description didn't prepare me for the reality. Carménère wine brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Ingredient appreciation — what makes Pastel de Choclo special
What sets Pastel de Choclo apart is the handling of merkén smoked chilli. In lesser versions this is treated as a background note. Here it's central and the smoky and herbal result shows it. I've started buying it to cook with at home after this experience.
