I spent an afternoon making Cazuela from scratch following a traditional recipe. Getting mote wheat right was the main challenge — it's not as straightforward as it looks. The smoky and herbal result was rewarding once I got it right.

Decent Cazuela — nothing more, nothing less
Cazuela at this place was fine. The simple and hearty flavour was there but not distinguished. Carménère wine was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

First time trying Cazuela — completely converted
I had never tried Cazuela before this visit and I wasn't sure what to expect. The subtly sweet with mote taste hit immediately and made sense of the dish in a way descriptions never quite do. shellfish from Patagonia is an ingredient I'd not encountered used quite like this before.
