I spent three months trying every version of Basturma I could find locally. The variation in quality is extraordinary. The best version handled madzoon yoghurt with genuine knowledge and the sweet-sour from pomegranate and apricot result was noticeably superior.

Honest verdict on Basturma — good but not exceptional
Basturma here was solidly made — subtly tangy without anything to complain about. dried apricots zardalu was present and handled reasonably. But something was missing from the depth that this dish should have.

Restaurant review — Basturma that actually delivered
I'm sceptical of any restaurant claiming to do Basturma well, having been disappointed often enough. This one delivered. The subtly tangy base was authentic and the use of pomegranate showed real knowledge.
