First time trying Cha Gio — completely converted

I had never tried Cha Gio before this visit and I wasn't sure what to expect. The clean and deeply savoury taste hit immediately and made sense of the dish in a way descriptions never quite do. rice paper is an ingredient I'd not encountered used quite like this before.

The a home cooking class setting added something to the experience — this kind of food makes sense in that environment. Vietnamese cuisine shows French colonial influence alongside traditional Southeast Asian techniques. My server recommended Vietnamese iced coffee alongside and it was exactly right. I've been telling everyone to try Cha Gio. Outstanding first encounter.
