Cultural discovery through Mandocas

Mandocas opened a door into a cuisine I'd previously known almost nothing about. The sweet-savoury from cornmeal base flavours are unlike anything in my usual rotation and I mean that positively. the arepa is Venezuela's daily bread — eaten at all meals in countless configurations. Understanding that context made the dish taste different — richer with meaning.

I learned that Queso de mano fresh cheese is central to this cuisine's character, not just a seasoning. The a family hallacas making session at Christmas setting was authentic and helpful for understanding what I was eating. Malta dark malt drink completed the picture. A genuinely educational meal.
