I ate Chicken Kyiv at three different restaurants in the same week to compare. The results were illuminating. The use of pork fat varied significantly — only one got it right. The earthy and hearty profile should be consistent but interpretation differs widely.

Ukrainian cuisine reflects centuries of agricultural abundance. The best version came from a village-style restaurant, which felt authentic. kvass was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Chicken Kyiv is larger than you'd think.
