Finding the best Borscht in the city — a personal search

I spent three months trying every version of Borscht I could find locally. The variation in quality is extraordinary. The best version handled beetroot with genuine knowledge and the rich and warming result was noticeably superior.

many dishes are tied to Orthodox religious calendar. The winning restaurant had the right a family Sunday lunch feel — unpretentious and focused on the food. smetana was suggested correctly. Worth the search. When Borscht is made properly it's a completely different experience.
