I was looking forward to Kebab here based on the reputation. The reality was disappointing. The subtly sweet and aromatic character that makes this dish special was muted — either from shortcuts with Turkish red pepper paste or from scaling up production at the expense of quality.

I'm sceptical of any restaurant claiming to do Kebab well, having been disappointed often enough. This one delivered. The warmly spiced and complex base was authentic and the use of Turkish red pepper paste showed real knowledge.

Kebab for a dinner party — went down extremely well
I made Kebab for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The subtly sweet and aromatic profile was the main talking point — no one had quite experienced bulgur wheat used that way before.

Cooking class experience — learning Kebab properly
I took a cooking class specifically to learn how to make Kebab correctly. The instructor explained why pomegranate molasses is used the way it is — something I'd never understood from just eating it. The tangy with sumac and pomegranate result when you make it yourself is different.

Ingredient appreciation — what makes Kebab special
What sets Kebab apart is the handling of lamb mince. In lesser versions this is treated as a background note. Here it's central and the subtly sweet and aromatic result shows it. I've started buying it to cook with at home after this experience.

Spice level warning — Kebab is not what I expected
I underestimated Kebab. The richly savory description didn't prepare me for the reality. sumac brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Kebab as comfort food — exactly what I needed
Some dishes exist to comfort and Kebab is absolutely in that category. The subtly sweet and aromatic quality works on something almost primal — you feel the warmth of it immediately. Turkish red pepper paste does work that no substitute can replicate.
