First time trying Couscous — completely converted

I had never tried Couscous before this visit and I wasn't sure what to expect. The boldly spiced and warming taste hit immediately and made sense of the dish in a way descriptions never quite do. preserved lemon is an ingredient I'd not encountered used quite like this before.

The a Tunis medina restaurant setting added something to the experience — this kind of food makes sense in that environment. Tunisia is the world's third largest olive oil producer and olive oil underpins the cuisine. My server recommended Celtia beer alongside and it was exactly right. I've been telling everyone to try Couscous. Outstanding first encounter.
