Cultural discovery through Bambalouni

Bambalouni opened a door into a cuisine I'd previously known almost nothing about. The deeply savoury flavours are unlike anything in my usual rotation and I mean that positively. Tunisia is the world's third largest olive oil producer and olive oil underpins the cuisine. Understanding that context made the dish taste different — richer with meaning.
