Street food Assida — the authentic version

The best Assida I've ever had came from a street stall, not a restaurant. The boldly spiced and warming intensity was completely different — more direct and uncompromised. preserved lemon was used without hesitation, the way it should be.

Tunisia is the world's third largest olive oil producer and olive oil underpins the cuisine. The a seaside fish restaurant setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Celtia beer was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
