Best Pad Thai I've had — and I've tried a few

Having eaten Pad Thai at several restaurants over the past year, I can say this version is the best. The balanced between sweet, sour, salty, and spicy quality is more pronounced here than anywhere else I've tried. galangal is handled with real knowledge — you can taste the difference.

This is proper a family restaurant cooking, not an adaptation for foreign tastes. Singha beer was the obvious choice and the combination was perfect. Thai cooking philosophy balances four key flavour profiles in every dish. Would return for this dish alone.
