I spent three months trying every version of Pad See Ew I could find locally. The variation in quality is extraordinary. The best version handled kaffir lime leaves with genuine knowledge and the balanced between sweet, sour, salty, and spicy result was noticeably superior.

Thai cooking philosophy balances four key flavour profiles in every dish. The winning restaurant had the right a traditional home kitchen feel — unpretentious and focused on the food. Thai iced tea was suggested correctly. Worth the search. When Pad See Ew is made properly it's a completely different experience.
