I spent three months trying every version of Stinky Tofu I could find locally. The variation in quality is extraordinary. The best version handled fermented tofu with genuine knowledge and the umami-rich result was noticeably superior.
Taiwanese night markets are a pillar of social life and street food culture. The winning restaurant had the right a family dumpling house feel — unpretentious and focused on the food. Taiwanese lager was suggested correctly. Worth the search. When Stinky Tofu is made properly it's a completely different experience.
