Spice level warning — Scallion Pancake is not what I expected

I underestimated Scallion Pancake. The comforting and warming description didn't prepare me for the reality. scallion brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Taiwanese night markets are a pillar of social life and street food culture.
