First time trying Scallion Pancake — completely converted

I had never tried Scallion Pancake before this visit and I wasn't sure what to expect. The umami-rich taste hit immediately and made sense of the dish in a way descriptions never quite do. scallion is an ingredient I'd not encountered used quite like this before.

The a traditional beef noodle restaurant setting added something to the experience — this kind of food makes sense in that environment. Taiwanese night markets are a pillar of social life and street food culture. My server recommended Kavalan whisky alongside and it was exactly right. I've been telling everyone to try Scallion Pancake. Outstanding first encounter.
