I spent three months trying every version of Lu Rou Fan I could find locally. The variation in quality is extraordinary. The best version handled fermented tofu with genuine knowledge and the umami-rich result was noticeably superior.

bubble tea was invented in Taiwan and exported globally as one of the most influential food trends of recent decades. The winning restaurant had the right a morning soy milk and scallion pancake shop feel — unpretentious and focused on the food. Taiwanese lager was suggested correctly. Worth the search. When Lu Rou Fan is made properly it's a completely different experience.
