First time trying Lu Rou Fan — completely converted

I had never tried Lu Rou Fan before this visit and I wasn't sure what to expect. The umami-rich taste hit immediately and made sense of the dish in a way descriptions never quite do. scallion is an ingredient I'd not encountered used quite like this before.

The a Taipei night market setting added something to the experience — this kind of food makes sense in that environment. bubble tea was invented in Taiwan and exported globally as one of the most influential food trends of recent decades.
