Best Beef Noodle Soup I've had — and I've tried a few

Having eaten Beef Noodle Soup at several restaurants over the past year, I can say this version is the best. The umami-rich quality is more pronounced here than anywhere else I've tried. fermented tofu is handled with real knowledge — you can taste the difference.

This is proper a family dumpling house cooking, not an adaptation for foreign tastes. Taiwanese lager was the obvious choice and the combination was perfect. Taiwanese night markets are a pillar of social life and street food culture. Would return for this dish alone.
