I made Beef Noodle Soup for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The umami-rich profile was the main talking point — no one had quite experienced basil used that way before.

Taiwanese night markets are a pillar of social life and street food culture. I explained the a traditional beef noodle restaurant context as I served it which helped people appreciate it fully. Taiwanese lager was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
