Finding the best Räkmacka in the city — a personal search
I spent three months trying every version of Räkmacka I could find locally. The variation in quality is extraordinary. The best version handled gravlax cured salmon with genuine knowledge and the clean and subtly sweet result was noticeably superior.
the smörgåsbord tradition of abundant cold dishes influenced buffet culture worldwide. The winning restaurant had the right a cosy fika café feel — unpretentious and focused on the food. lingonberry juice was suggested correctly. Worth the search. When Räkmacka is made properly it's a completely different experience.
