Honest verdict on Gravlax — good but not exceptional

Gravlax here was solidly made — clean and subtly sweet without anything to complain about. cream was present and handled reasonably. But something was missing from the depth that this dish should have.

Swedish fika culture elevates the coffee break with pastries into a social institution. The a midsommar summer feast atmosphere was pleasant enough. aquavit was available and a good suggestion. For a reliable version of Gravlax this works. For an exceptional one, I'd keep looking. Three stars.
