Best Pol Sambol I've had — and I've tried a few
Having eaten Pol Sambol at several restaurants over the past year, I can say this version is the best. The tangy from goraka and tamarind quality is more pronounced here than anywhere else I've tried. Maldive fish chips is handled with real knowledge — you can taste the difference.
This is proper a Colombo rice and curry lunch cooking, not an adaptation for foreign tastes. Ceylon tea was the obvious choice and the combination was perfect. Maldive fish is a uniquely Sri Lankan ingredient with no close equivalent elsewhere. Would return for this dish alone.
