I spent three months trying every version of Pol Sambol I could find locally. The variation in quality is extraordinary. The best version handled Maldive fish chips with genuine knowledge and the warming with cinnamon result was noticeably superior.

Sri Lankan cuisine differs markedly between Sinhalese, Tamil, and Burgher traditions on the same island. The winning restaurant had the right a hill country tea estate restaurant feel — unpretentious and focused on the food. arrack was suggested correctly. Worth the search. When Pol Sambol is made properly it's a completely different experience.
