Best Hoppers I've had — and I've tried a few
Having eaten Hoppers at several restaurants over the past year, I can say this version is the best. The warming with cinnamon quality is more pronounced here than anywhere else I've tried. Ceylon cinnamon is handled with real knowledge — you can taste the difference.
This is proper a Colombo rice and curry lunch cooking, not an adaptation for foreign tastes. arrack was the obvious choice and the combination was perfect. Maldive fish is a uniquely Sri Lankan ingredient with no close equivalent elsewhere. Would return for this dish alone.
