The best Tortilla Española I've ever had came from a street stall, not a restaurant. The smoky and savoury intensity was completely different — more direct and uncompromised. smoked paprika was used without hesitation, the way it should be.
Spanish eating culture centres on long social meals rather than quick eating. The a Sunday family paella setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Cava sparkling wine was sold right next to it.
