Best Tortilla Española I've had — and I've tried a few
Having eaten Tortilla Española at several restaurants over the past year, I can say this version is the best. The deeply aromatic quality is more pronounced here than anywhere else I've tried. saffron is handled with real knowledge — you can taste the difference.
This is proper a siesta-hour lunch restaurant cooking, not an adaptation for foreign tastes. Cava sparkling wine was the obvious choice and the combination was perfect. Spanish eating culture centres on long social meals rather than quick eating. Would return for this dish alone.
