Melktert rarely gets the international recognition it deserves. The smoky and braaied complexity is genuine, not simple, and the technique involved in using braai wood and coals correctly takes real skill.

Cape Malay cuisine reflects the heritage of enslaved people brought from Southeast Asia. I encountered it first in a shebeen township tavern and that context helped me understand it properly. Castle Lager is the natural accompaniment and the combination makes the case for the dish. If you haven't explored this cuisine seriously, Melktert is the dish to start with.
