Best Chilli Crab I've had — and I've tried a few

Having eaten Chilli Crab at several restaurants over the past year, I can say this version is the best. The richly coconut-sweet quality is more pronounced here than anywhere else I've tried. sambal belacan paste is handled with real knowledge — you can taste the difference.

This is proper a kopitiam coffee shop cooking, not an adaptation for foreign tastes. Tiger beer was the obvious choice and the combination was perfect. Singapore's hawker culture was inscribed as UNESCO Intangible Cultural Heritage in 2020. Would return for this dish alone.
