Best Solyanka I've had — and I've tried a few

Having eaten Solyanka at several restaurants over the past year, I can say this version is the best. The rich and dairy-forward quality is more pronounced here than anywhere else I've tried. salted herring is handled with real knowledge — you can taste the difference.

This is proper a Moscow restaurant cooking, not an adaptation for foreign tastes. kvas was the obvious choice and the combination was perfect. Russian New Year table is the most important annual food event, laden with Olivier salad, herring under fur coat, and other Soviet-era staples. Would return for this dish alone.
