Having eaten Okroshka at several restaurants over the past year, I can say this version is the best. The hearty and warming quality is more pronounced here than anywhere else I've tried. sour cream smetana is handled with real knowledge — you can taste the difference.

This is proper a Moscow restaurant cooking, not an adaptation for foreign tastes. black tea from a samovar was the obvious choice and the combination was perfect. Russian New Year table is the most important annual food event, laden with Olivier salad, herring under fur coat, and other Soviet-era staples. Would return for this dish alone.
