Best Blini I've had — and I've tried a few
Having eaten Blini at several restaurants over the past year, I can say this version is the best. The subtly sour from fermentation quality is more pronounced here than anywhere else I've tried. sour cream smetana is handled with real knowledge — you can taste the difference.
This is proper a traditional Russian stolovaya canteen cooking, not an adaptation for foreign tastes. black tea from a samovar was the obvious choice and the combination was perfect. the Russian tea tradition using a samovar is centuries old and central to social hospitality. Would return for this dish alone.
