I ate Makowiec at three different restaurants in the same week to compare. The results were illuminating. The use of dried mushrooms varied significantly — only one got it right. The deeply savoury with fermented notes profile should be consistent but interpretation differs widely.

the Christmas Eve wigilia meal has strict traditional rules including twelve meatless dishes. The best version came from a Warsaw milk bar, which felt authentic. kwas chlebowy bread drink was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Makowiec is larger than you'd think.
