First time trying Pollo a la Brasa — completely converted
I had never tried Pollo a la Brasa before this visit and I wasn't sure what to expect. The fresh and marine taste hit immediately and made sense of the dish in a way descriptions never quite do. quinoa is an ingredient I'd not encountered used quite like this before.
The a Novoandino contemporary Peruvian restaurant setting added something to the experience — this kind of food makes sense in that environment. Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. My server recommended Pisco Sour alongside and it was exactly right. I've been telling everyone to try Pollo a la Brasa. Outstanding first encounter.
