Pollo a la Brasa at this place was fine. The subtly sweet with chilli heat flavour was there but not distinguished. huacatay black mint was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. The a coastal chicharronería setting was generic rather than immersive. Pisco Sour was offered but not explained. If you're in the area and want Pollo a la Brasa it'll do. If you're going out of your way, look elsewhere.
