Cultural discovery through Aji de Gallina

Aji de Gallina opened a door into a cuisine I'd previously known almost nothing about. The fresh and marine flavours are unlike anything in my usual rotation and I mean that positively. Lima is considered one of the world's great culinary destinations. Understanding that context made the dish taste different — richer with meaning.

I learned that leche de tigre lime marinade is central to this cuisine's character, not just a seasoning. The a Lima cevichería setting was authentic and helpful for understanding what I was eating. Pisco Sour completed the picture. A genuinely educational meal.
